Nerd Alert: While historically the grape was only produced as part of regional blend in Penedès and Cava, modern winemaking has evolved in the last 20 years to where it is being seen in the form of varietal wines. Winemakers value this grape for the acid structure it brings to wines. The town of alella in Cataluña is known for making dry table wines from the grape and from it’s variant Xare-lo Rosada.

Personal Note: This was a very curious thing to try for me. As an avid fan of cava, this grape and I have quite a long history together. Kind of like Ross and Phoebe in Friends. Always in the same group but not a lot of one on one time if you know what I mean. In the case of Xare-lo we were always together with Parellada and Macabeo. So this was a welcome experience. At one point, while trying this wine, it tasted like a flat cava which…makes a lot of sense come to think about it. But the wine had great acidity and aromas. Now I need to get the other two grapes alone. Shouldn’t be long.
